I've had trouble finding really good ribs in my area (Silver Spring) so first, shout out with your favorites, then to be specific, this is how I like ribs:
They have to be meaty w/o too much fat
They have to be tender, but not falling off the bone, I don't want to eat them with a fork
I want a real thick crust on them that almost crunches with tar-like sauce. <-key
I want them sweat but with a good wood flavor.
