Those who think that pistachio nuts should be bright red need not apply.

My first trip to Il Laborotorio del Gelato was a smashing success. Pistachio is my favorite ice cream flavor and while I can appreciate the bright green varieties for their own nostalgic charm, this was a different beast. It was the truest pistachio flavor I've ever tasted in a gelato. The bits of ground pistachio provided the ideal extra bit of textural contrast.

A spoon of ricotta gelato I sampled was soothingly creamy but I was in the mood for something more intense. It started me thinking of one of my favorite snacks as a child: ricotta cheese, spread on a slice of bread and dusted with pepper and a bit of salt. I wonder what the ricotta gelato would be like if they spiked it with a bit of black pepper.

They have a sign posted warning about a portion size decrease of the medium and large sizes due to increasing ingedient costs. Luckily the flavors are so strong and the gelato is so creamy here that you don't need all that much to be satisfied.
