So, out of the blue a neighbor gave me a bag of key limes!
Having bookmarked the Joes recipe.........

.....I made the Joes Key Lime pie.
It is a great recipe...so very simple.
For the crust I used fresh grahams ( New Morning brand from Wild Oats ) and ground them in my coffee grinder in small batches, and used butter and light brown muscovado sugar.
I followed the filling recipe exactly except after I had added the lime juice I tasted it and it did not seem tart enough. ( had lots of fun juicing the tiny key limes with my electric citrus juicer!!)
Not wanting it to wind up too sweet I added maybe a tablespoon of lemon juice, because I had juiced all the limes to get the 2/3's cup lime juice. So I also grated a bit more lime rind and added that too. ( yes ...it is more difficult to zest an already juiced key lime)
Baked it longer than the 10 minutes...maybe 18 minutes.
Chilled and ate some that first night...thought it was just OK...not as limey tasting as I had hoped.
The next day...wow...the lime flavor had really improved and mellowed...in fact now i think I may not have needed to add the lemon.
So give this dessert a chance to sit and gain flavor....
I will also be trying it substituting fresh passion fruit for the key lime.
