Very grateful for a couple of posts on this board about this place.
This is the only serious ramen I've encountered in the Boston area. (Apologies, but imho the unfortunate examples at Men Tei and Sapporo Ramen, the latter a less egregious offender, don't count.)
Broth in the kita no kuni salt ramen has a pleasant stocky flavour, lightly cloudy from a compelling amount of simmering. The ramen is springy, and gives off a mild chewy character. The ingredients and garnishes are goood, and the cha shiu/pork slices are noticeably flavourful, with a decent balance of lean and fatty parts. Could be a little oilier, but that's a quibble. Very satisfying.
