Keeping Bread Fresh (and a butter question too)

We often keep supermarket sandwich bread in the house (Arnold's or Vermont brand wheat or multigrain) and I was wondering what the best way is to keep it fresh? My husband likes to wrap it in a plastic bag and stick it in the fridge, but that seems excessive to me. What do you think?

Also, is there a butter that is spreadable and soft besides Breakstone's whipped butter which I find kind of awful? Anyone keep their butter out of the fridge? I've always been tempted to, but living in an apartment in NYC with an awful fear of bugs, I've always kept it in the fridge...
