Preparing for a visit later this month to Kauai, I've been googling around to locate a locally made Portuguese sausage brand and coming up empty. Are there any new chefs on Kauai tackling this classic with local pork? Or old school sausage makers that I should try?
I did find this 2007 write-up comparing different brands. And also a more recent 2013 comparison of mainland to island producers.
My own favorite linguica made in California is Fernandes caseira that's chunky style with a hint of red wine. Hard to find though.
The Portuguese population in Northern California originated mainly from the Azores and the linguiça style reflects that. From where did Hawaii's Portuguese community originally hail?
