Stopped in Vendome on Yorba Linda Blvd to check out the beer selection and noticed a place called Mr. Katsu. Opened in Dec, they basically have only Katsu sandwiches with different combos of toppings.

Tried the original - pork cutlet with katsu sauce and cole slaw on thick toast and one with habanero pesto and really enjoyed both. The cutlet is nice and crisp even after a short car ride home and had some good pork flavor.

They use a thick cut potato bread that holds up to a well stuffed sandwich with wet slaw. The cole slaw has some vinegar tang to it but not so much that the taste of the cutlet gets lost.

Only side is potato croquettes that are good if a little bland while they sort out an issue with the potato salad.

They also have a selection of 4-5 Japanese beers that went beyond the typical Sapporo/Kirin etc, including a couple of Echigo bottles.

Definitely recommend checking it out - good food and super friendly folks running it.

Sandwiches are pretty filling and around $8-10 pre tax.
