The recipe for Kam's Gourmet Chicken was requested on the SF board. I've never had it at Kam's... but try this and let us know if it comes close.
Season chicken thighs with salt and pepper, cut into bite-sized chunks. Dredge pieces of boneless chicken thigh in cornstarch, dip in beaten egg, and dredge again in cornstarch. Deep fry until golden. Drain on paper towel. Set aside.
Make sauce: Mix 1/2 cup orange juice with sugar (or light corn syprup) and hot chili sauce, reduce to thicken. Add the fried chicken pieces and continue to cook until done. Serve hot with rice.
