Kaiseki restaurants in Tokyo & Kyoto - Waste of Money?

Hi All,

I'm going to be visiting Tokyo and Kyoto soon and am looking for some Kaiseki restaurants in both cities. However, with a limited budget, I have to ask first:

Are traditional Kaiseki restaurants a "waste of money"? Usually the ones in Tokyo and Kyoto I see hover in the ~$200 - $300+ range. I don't mind spending the money if it's worth it, but how does it compare to something more modern, like, Ryugin (Tokyo) (which is modern / fusion kaiseki)?

I've never tried Kaiseki-style before, so I'm curious, but if you can only afford 2 "big $$$" meals, would you recommend traditional Kaiseki over Ryugin and Sukibayashi Jiro?

And how different is the Kaiseki experience in Kyoto vs. Tokyo?
