"KAGA JAPANESE CUISINE" - Finch & Bayview - Eating some of the freshest Japanese Sashimi in the GTA?

'HOBO' ( Red Gunnard ) is one of the most famous and popular Summer seasonal fish in Japan. Tonight, I had the pleasure of trying out for the first time, this sweet and crunchy textured Japanese delicacy in Sashimi form at KAGA.

In addition, their selection today, for whole fish sashimi, include Shima-Aji, Sayori, Amadai, Madai, Tai...etc. All arrived by air from Japan this morning!!

Also, splurged on Botan Ebi with heads fried plus West coast Uni, Kampachi and Hamachi Nigiri.

I am pretty picky when comes to Japanese food especially sushi/sashimi which involves consuming 'raw' seafood. However, based on my observation of the freshness and quality of the seafood products offered, I think this place ( Chinese owned but sushi chef trained under Japanese chef and worked in high end Japanese restaurant in Hong Kong ) is safer and quality a notch or two higher than a lot of your run-of-the-mill, non-Japanese own and operated outfits including Korean ones. ( Closest comparison is Inatei on Leslie and Hwy#7 ).
BTW, their ' cooked ' food especially the grilled ones were very nicely executed and good. Stand outs include the grilled whole squid and skewers of beef-tongue, chicken cartilage...etc. Even their Tonkotsu Ramen was surprisingly tasty, with perfectly timed ramen noodles in a delicious, umami laden milky pork bone broth?!!!

Very reasonable price for the quality offered. Commendable, attentive and friendly service.
