KABOB

My husband is from Azerbaijan where he was accustomed to eating all manner of shish-kabob (lamb's testicles on a stick, anyone?) on almost a daily basis. For his 40th birthay this Friday (!) I'm planning on making a pilaf and would like to order some nice, hot, juicy kabobs - for take-out, for about 12 to 15 people. I'm thinking a variety of lamb, beef, chicken and possibly fish would be good. We live in downtown Manhattan, but can pick up from anywhere in the borough.
Any ideas, suggestions?
