This is the sleek new hot spot in town, a modern, blond wood and airy dining room in Burlington's first boutique hotel. A few steps above the lobby, an open floorplan has a large alcove of about 10 tables next to a long communal high top and a bustling bar. Some swishy well heeled guests, some regular Burlingtonites. Service was not as sophisticated seamless as it should be, but i bet it will get there.
Mixed Greens with Spiced Nuts, Dates and Blue Cheese bits- interesting touches
Quail w/ Hazelnut Gastrique (can't remember rest)- one pristinely fresh and flavorful quail but only a hint of hazelnut, and plate was too sparse for $28
***Roast Salmon with Spicy Southwest Ragout of Corn, Summer Squash, Potato, Chiles, Tomato- This was a Special, and while the 4 ou. filet was skimpy for $28, it was a thrilling thrilling treatment; one of the best salmon plates i have ever had. Each component was perfectly cooked and the flavors all distinct, not muddled (a real coup!)
***Red Hen Cyrus Pringle table bread- great bread but pre-slicing left it dry.
***Scouts' Honor (Tahitian) Vanilla Ice Cream- pretty darn amazing for such simplicity.(great co. name, yes? Waitsfield)
Off the dining room/bar open space, there is a beautiful rooftop deck w/ upholstered seating, fire pit and view of the lake. Very elegant spot for special occasions.....
Hen of the Woods will soon be moving in next door, so these two will likely keep each other on their toes, both food and service-wise. Congrats to Burlington!
