Jubilee Chocolate

This is an incredible chocolate from Philadelphia. They were on the cover of Gourmet magazine last month with the endorsement of "our favorite chocolates", which immediately makes one wonder how much Gourmet was paid to write that. I ordered a few boxes and they really are fantastic. Extremely thin chocolate shell, slightly sweeter than Maison du Chocolate fillings, for instance (my favorite, and a benchmark for all others), but the ganache centers just as smooth and well balanced. The flavors which would normally be overwhelmingly strong or unbalanced - bergamot, lavender honey, and star anise - were all beautifully made, and very subtle.
They use organic local cream in their ganache and local raspberries (one of the best chocolate and raspberry fillings I've ever had) and mint too.
The temper suffered a bit in the freezing weather in the east, but even at that they were just some of the best I've had anywhere.
They have a very modest website, which is also reflected in their line of chocolate flavors - very modest, which isn't a criticism at all.
