Can I make jook with a smoked turkey wing?

Bought a smoked turkey wing at the grocery store, but I see now the recipe calls for "fresh" which I assume means raw. ( This is the recipe I was going to use: http://www.myrecipes.com/recipe/rice-... )

Will it be OK if I just use the smoked wing, or will that not produce a good stock? Since it is precooked, should I remove the meat from the wings and reserve that to add in later?
