Looking for joints with consistently al-dente pasta...

Any one know where I can consistently find al-dente pasta?

Had it a few times on the dining train from Milano to Venizia and can never forget it. It was definitely sundried variety noodle, perfectly al-dente in texture, and looked almost translucent beneath the very light coating of fresh tomato sauce. The chef toss the pasta and served right at the table.

I was never able to find anything remotely close in Toronto. Most of the "home-made" variety at the modern eateries are inconsistent, often mushy, and they seem to focus on strongly flavoured creamed or fancy/spicy sauce - masking the inferior preparation and pro-longing the pot-to-kitchen-to-waiter-to-stomach time.

Brunello's around Yonge and Sheppard area, from way back, came close... before they had the dispute and the chef went back to Italy :-(
