I'm going to Salt for the first time tonight - I've been dying to go for a long time. So to prep for the occasion, I visited my (family-run) neighborhood deli - JN&Z. JN&Z happens to be an exclusive supplier to Salt. (Salt copycats need not apply - the family is a longtime friend).
They cold smoke everything in their small closet sized smoker and they do not use any preservatives (other than Brandy, Cognac, salt, smoke and love). They, thus, use no Nitrites or Celery powder (which is a natural source of nitrites and commonly used in "nitrite free" meats.
They are old-school and steadfastly refuse to follow trends. They chuckled when I commented that other delis would have called themselves "artisinal charcuteries" by now.
They can barely keep up with the local demand for their products. The only places you can get them are at their Commercial Drive location and Salt (nice coup!)

Apparently, when Natasha and Zorica were kids, their dad came home one day exclaiming..."guess what! I bought you a store!". Now they run the front of house and develop their own recipes.
