I've been searching for someone who can tell me how to make jian bing which I've eaten as street food in Beijing & Shanghai but doesn't seem to be available anywhere in the USA. The preparation I've seen is a crepe-like pancake, an egg swirled around and cooked on top of the pancake, a sprinkle of pickled vegetables and greens, folded over a cruller, then smeared with hot sauce and folded a few more times. I'm interested in the batter for the pancake/crepe, but would appreciate the list of ingredients, especially a good brand of the hot sauce.
