Let's talk jerky. Any recs?

I've explored asian jerky already. Jung's Dried Beef on Mulberry between Mosco and Bayard in Manhattan seems better than the place on Elizabeth near Grand, but I'm honestly not thrilled about the grease or mushy texture.

How about some good, headache-when-you-chew dried Texas-style beef jerky? Anyone have any favorites?
