I attempted to make jelly for the first time. I followed the recipe in Mastering the Art of Southern Cooking for Pepper Jelly to a T except I did half coconut sugar and half granulated. I checked I think the Ball canning site? and it said its fine to use coconut sugar. The other thing is that I did not actually can it. I just put it in jars in the fridge as I am not up to canning yet. I used the liquid pectin as instructed. Its been like 48 hours and its kind of thick but not Jelly. Any idea what happened? it tastes ok so I think I will use it as a glaze but I wanted Jelly!!
