Following a trail of crumbs dropped by David Libovitz to Rochoux' website, I see that he makes a chocolate round that one shaves on a carrousel, similar to (and I'm hoping the same as) that used for Tete de Moine, to create chocolate (or cheese) roses.

Add David's hearty endorsement of Rochoux' påte de tartiner in several flavors and I'm hooked.
