One Jar of Mole - what do you recommend?

So where I live right now, Mexican hasn't really taken off, apart from the horrendous and very ordinary 'tex-mex' handful of restaurants and food-hall outlets.

But, on a recent holiday overseas I chanced upon a food purveyor and picked up one lonesome 7oz jar of mole, after reading/ hearing about it so many times on this site and others.

My question being - I only have one jar/ once chance - what should I do with it? Any favourite recipes?
