Japan Trip (Tokyo, Kyoto, Naoshima, Hiroshima) - the best below the very best?

Dear Chows!
I have read extensively by now and still i would like to ask you for your comments! Beginning of september i will travel to Japan. As being a student but still a foodie there are some limitations i had to take affording the trip ( especially in terms of housing, Airbnb, no concierge! ) and the 18 upcoming days of travel and eating.
What i am looking for is the authentic Japan experience, in terms of ramen, soba, tempura etc. i have a few spots on my list and will rely on tabelog etc. for more, this will make 80% of my trip.

However, i would like to ask you what restaurant ( with or without stars ) are a must bus still affordable? I am somewhat limited with the power if reservation as i am staying at an airbnb but i guess there ist still plenty that could work. Lunch is always an option!

Also, as we will stay 1 week in tokyo, 5 days in kyoto, 1 day in hiroshima, 2 days in Naoshima + some day tripping in-between we are quite flexible where the best is!

I am looking for a very good sushi place around 60 usd? ( Maybe Sushi Iwa? alternatives or better suggestions? )

and one special and creative meal that can be around 150, drinks included. Here we thought about Florilege, Fuyija 1935, Den

Could you help us out? And are there alternatives or affordable not to miss spots in the cities?
I know, japan is crazy big and full of restaurant, just trying to limit my choices with you experience!
