Happy New Year!
Wishing all a warm welcome to our January 2021 edition of Cookbook of the Month. We'll be exploring two books this month: Vegan JapanEasy and JapanEasy, both by Tim Anderson.
This is our master thread for the books. While we're cooking together this month, this thread will be a place for us to share thoughts and inspiration, ask questions, chat about ingredients, consider our favorites from the books, and form conclusions as we wrap up the month.
Please use the threads below to report on recipes from the noted chapters:

Finally, I would like to extend a special welcome to anyone new to Cookbook of the Month (COTM) or returning after a break. Start the new year by cooking with us! This is an inclusive community for home cooks of all levels, even if you're brand new to cooking. We learn (and laugh!) as we cook together, and we are thrilled when newcomers join us for the camaraderie and shared learning of COTM. If you're new, all you have to do is cook a recipe from one of these books and post your report on the corresponding thread, with a photo if you wish. Happy cooking to all!
