I made jam (peach) last night for the first time... wow, I never realised it was so fantastically easy. I'm ashamed to think of all the money I've wasted on the commercial stuff.
Tonight: marmalade! I can't get Seville oranges this time of year, which is a shame. But my question is whether I need to get organic oranges to avoid ingesting horrible chemicals in the peel... and what variety would best equate to Seville ... finally, why do I need to use a lemon as well (all the recipes call for it)?
