Jalapeño powder

JonParker | Sep 22, 2009 01:10 PM

I had to buy an entire pint of jalapeños at the farmer's market last weekend, even though I only needed one or two.

Not wanting them to go to waste, I washed the rest and cut them into a small dice, gave them a spin in the salad spinner, then stuck them into the toaster oven on dehydrate for a couple of hours.

Once dry, I put them into my a coffee grinder (the spare one I use for spices) to make a powder Now I have a jar of jalepeno powder that I can use for various dishes. Today I'm doing red beans and rice, and I put a teaspoon into my onions/peppers/garlic when sauteeing them.
