First Italy Trip for my Girls

Hi All - we are taking our girls, aged 15 and 13, to Italy next week, starting in Rome And then on to Montepulciano, Florence, and Venice. I hope to help them discover REAL Italian food - I know they will love it as much as their parents do. I particularly need help in Rome; we are staying in an apartment near Campo dei Fiori, arriving this Wednesday and staying for 5 nights. My girls are both very adventurous eaters and will try anything. Where do you suggest we go?
Also, when my husband and I traveled before kids, we always went in the much quieter fall months and never found that we needed to make reservations more than a day in advance. Should I scramble to book tables now? What is the best way to reserve? Or can I wait until we get to Italy?
