Italy Itinerary (Rome, Venice, Florence, Montalcino, and Capri) Phew! Feedback would be appreciated.

Hi there! My husband and I will be traveling to Italy for the first time in August for around 2 weeks. I've done some research reading through the posts here, different guides, blogs, and other websites. I've come up with a tentative list and would like to get some feedback.

ROME (4th, 5th and part of 6th)
August 4th:
-We arrive in Rome at 7:45 AM and will probably get into the city around 9? Staying near the Spanish Steps, I am assuming there are places around there to eat breakfast? Or we might try Panella or Lotti?
-Maybe lunch at Ristorante Nino
Tour of the Colosseum at 3
Il Pagliaccio

August 5th:
-maybe try going to Tazza D'Oro or Sant Eustachio
Tour Vatican
-Trattoria Monti
- La Pergola

Gelato Stops: Frigidarium, Gelateria Del Teatro, Come Il Latte, Valentino, maybe Pascucci for some frulatti?

We head to Venice early afternoon of the 6th. . .

VENICE (6-8)
August 6th
-eat breakfast or brunch in Rome. Recommendations requested or might head to a place near the train station?
-arrive at 5 PM
-eat dinner at Osteria Alle Testiere?

August 7th
Breakfast: from a bakery nearby, maybe Pasticceria Tonolo
Lunch: at hotel? or maybe pizza at Antico Forno
Dinner: Il Ridotto

August 8th
Breakfast: at bakery
Lunch: Al Covo?
Dinner: Oro Restaurant
*we were thinking of taking a trip out to an island our last day - either Burano or Torcello, but read that Venissa is no longer good due to new chef and staff :( Thoughts on this?

Gelato Stops:gelato fantasy, suso gelatoteca, gelateria ca d’oro, gelateria il doge, cioccogelateria venchi?

We head out to Florence on the 9th and arrive early afternoon.

August 9th
Breakfast: eat at bakery in Venice
Lunch: buy some things to eat from Rialto Market? Or eat late lunch at Enoteca Pitti?
Dinner: Trattoria Del Fagioli or Da Ruggero?

August 10th
Breakfast: quick breakfast (suggestions are welcome) tour at 9:15
Lunch: Trattoria Sostanza
Dinner: Trattoria Due G or Cipolla Rossa. Opinions on the best bistecca fiorentina?

August 11th
Breakfast: bakery?
We have two museum tours that day so would have to eat quick lunch near Uffizi Gallery. Thoughts?
Dinner: La Bottega Del Buon Caffe

Gelato Stops: Ottaviano, Santa Trinita, La Carraia, dei Neri, della Passera

-We will drive down to Montalcino and stay at Castello Banfi
August 12th
Breakfast: bakery in Florence?
Lunch: somewhere in Montalcino, maybe Osteria Osticcio
Dinner: at Banfi

August 13th
Breakfast: at hotel
Lunch:Grappolo Blu?
Dinner: Boccon Di Vino

August 14th
Breakfast: at hotel
Drive back to Florence
Lunch: quick sandwich or buy lunch box on train to Naples
Dinner: Il Riccio in Capri

CAPRI (night of 14th-morning of 17th)
August 15th
Breakfast: at hotel
Lunch: Da Gelsomina?
Dinner: Da Tonnino or Aurora?

August 16th
Breakfast: at hotel
Lunch: Il Faro in Capri or go to Positano for quick day trip? eat somewhere near Fornillo Beach in Positano?
Dinner: L'Olivo

August 17th
Breakfast: at hotel
head back to Naples then to Rome at 1:30 PM
Late lunch in Rome? Maybe try Pizza Leoncino or Pizzarium?
Dinner: Metamorfosi or Il Convivio Troiani? I'm divided between the two.

August 18th - we fly out!!
