I needed to whip up a quick sauce for tortellini this evening after our driveway turned into an ice rink & we didn't dare drive anywhere. I had fresh ground beef on hand so I started out making a simple meat sauce. I browned the meat, added chopped garlic and onions, canned tomatoes and dry spices including oregano, basil thyme, crushed red pepper flakes, salt and pepper. I also added fresh ground allspice, tummeric, garam masala, soy and Worcestershire sauce. Both my wife and I really liked it. Some culture must be cooking like this because these flavors work well together.
Are there any Italian or Middle Eastern regional cuisines that use similar spices?
