I want to make "Chicago style" Italian sausage that I can put on pizza. I no longer live in Chicagoland, but I think the pizza sausage there is the best. I cannot source decent sausage at any of the supermarkets here in NC, so I want to make my own. I have a meat grinder.
So does anyone have a recipe for making this? I would appreciate it greatly. (BTW, I will be leaving it in bulk form, not in casings, if that matters).
Alternately, if anyone knows a mail-order source for this kind of pizza sausage, that would be great, too. You really don't know how good you have it there until you leave!!!
