Italian Bread Question ??

I often make dough in my bread machine and then bake it in another pan in the oven, that way I can make my own desired sizes and shapes. I want to make the dough ahead of time but how should I store it to make at a later time. If I am making it in a few hours should I just leave it out ?, refrigerate it then let it come back to room temp and rise again ? I am a little confused as to how it would affect the baking texture if any?
