Israeli style hot sauce

There is a great falafel shop in Brookline Mass,
named Rami's. I just had lunch there and had
some hot sauce that I absolutely loved. The guy
who works there said it is called "sourek" or
maybe he said "soulek" or something phonetically
similar to that. I assume that it is an Israeli
specialty since the propieters seem to be Israeli.

The hot sauce isn't extremely hot, but it is quite
yummy. It seems to consist mainly of some finely
chopped fresh green herb, with a fair amount of
olive oil, peppers, and other flavors I couldn't

Based on the vague name, I haven't been able to
find anything else about it online. If you have
any pointers to what this stuff is, or how to make
it, please let me know! And if you are in the

Corner for some fine falafel/houmous/babaganouj/etc.
