ISO Muffin Recipe With No White Flour or Sugar (Savory OK)

I need to make muffins (or something equivalent) for someone on a restricted diet and am hoping someone can offer suggestions. Savory recipes are also welcomed. The person I'm baking for is ill and has lost a lot of weight, therefore I'm not looking for a recipe that is low in fat. Eggs and dairy are fine. I was thinking that a muffin with sweet potato/pumpkin puree and cornmeal might work well, or a savory muffin with cheese. Crackers might be an option too.

Here are the parameters:

- Whole-grain flour or rice flour
- No sugar -- the muffins can be sweetened with fresh/dried fruit, but no sugar/honey/molasses, etc.
- The recipe would preferably call for coconut oil, but butter or another type of oil is workable.
