I've been searching the net for a lemon blueberry bundt or pound cake that does not use butter, sour cream, milk, cream, or yogurt. Eggs are fine. I would like to use oil as I'm looking for a very moist crumb. So far, I haven't found anything. Any time I look for dairy free cakes, I get a million vegan sites and since I'm partial to eggs in my cakes, these recipes aren't of interest to me. Any thoughts??? Oh yes, I'm lactose intolerant, hence, the dairy free requirements. Coconut milk would be ok as a milk sub. I've tried soy yogurts as subs for dairy yogurt......eh! Don't like tofutti sour cream, either. Earth Balance spread is OK as a butter sub, but my cakes aren't as moist (or flavorful) as those made with oil.
