A number of years ago I had a bowl of beans at an Italian restaurant in northern Virginia. The beans were on the antipasto menu, simply called Fagioli (duh) and arrived on a shallow plate. They were creamier than your basic pot of beans, but not as thick as baked beans. I'm pretty sure they were made with pancetta, although none showed up on the plate. They had a wonderfully ham-y smoky flavor.
They were some of the best beans I've had in my life. I'm sure the prep is dirt simple, but I hope I won't have to suss it out by my lonesome. That's a lot of beans. Does anyone have a recipe for this treat?
