ISO Healthy Birthday Cake

iLoveFood | Oct 13, 200608:26 PM     3

My son is turning 1 next month and I would like him to have a cake to mush up and eat but I do not want to give him something out of a box or anything with too much sugar. In addition to my son there will be some other babies there and I want to be able to give them somehting healthy as well. I was thinking about making mini cakes (or muffins) for each child.

I'm ideally looking for a cake that uses agave nectar or something similar to sweeten, it could even be something like zucchini bread or carrot cake.

Does anyone have any ideas or recipes?

Thank you in advance.
