Can you please recommend a good butcher or market in or near North Orange County? I am currently searching for some English style beef short ribs to prepare the short rib recipe from Molly Stevens' "All About Braising". I have visited the Beef Palace in Huntington Beach but felt the meat looked a little tired. I loked at Sam's club but they only had flanken style short ribs. The butcher, did however, say that I could order the English style ribs with a few days notice. I may indeed do this, but it has led me to look for a reliable butcher or market for meat.
