ISO Budget-Conscious, Meat-Centric Meals for a Crowd

Hounds, I need your help. For the next 2-3 weeks, my son's family will be moving in with us, which means I'm feeding 8 people. I've been cooking for 2 for the last 20 years, so I'm in a bit of a pickle. I need to keep the budget low and satisfy 4, count 'em, 4, carnivorous GrandPups who eat like, well, animals. I mean that these boys can EAT! Mom and Dad work long hours, she as a nurse doing 12-hr shifts, he in auto finance. I'll be doing most of the cooking, so I want easy, too. This is a LOT of mouths to feed!

Normally, when I want, say, a chicken/mushroom/rice thing, I use fresh 'shrooms and make a pan sauce or a roux gravy. In the interests of saving money and time, I'm happy to use canned mushrooms or cream of mushroom soup.

I'm already planning to do Pulled Pork Sandwiches, Spaghetti w/meat sauce, Tacos, Pot Roast, Mongolian BBQ, Skillet Lasagna, Jerk Burgers, Chicken Caesar Salads, BBQ Chicken and Salmon Patties (although given the price of canned salmon, I may have to rethink that one). Most of these will have a fresh veggie or salad/slaw as the main side. I'll be making a lot of bread and rolls to round them out.

Meaty, cheap and easy are the keys, with cheap and easy being most important, as many recipes will need to be doubled. Can you help? Thanks!
