ISO: Asian Winged Beans: The Magical Bean

Gio | Jun 8, 2013 08:55 AM

A truly magical bean, said to able to counter malnutrition since all parts of the plant are edible: pods, beans, shoots, flowers, even the tuber. Furthermore, it's easily grown and can be a perennial in the right environment. The beans are sold as Four-Angled beans, Goa beans, Princess beans, Winged peas, and Winged beans.

In any case, I need the beans for a recipe I want to make from this month's Cookbook of the Month: Burma: Rivers of Flavor/Naomi Duguid.

ETA: I'm thinking the beans may be showing up at local Farmers' Markets about now...
