So if anyone saw my last post I killed my sourdough starter. Luckily, I remembered I had the "discard" pile in a jar. It wasn't as much, but it was my original starter just very, very hungry. I have fed it for several days and keep trying to get it ready to bake with. Even today, fed it 8 hours ago. I measure it and measure it and I checked on it about an hours ago, did the float test, wasn't ready. But had risen considerably since being fed 7 hrs prior. I waited another hour exactly and did the float test again and it failed again and I could tell it had just started to sink and there were a couple tiny pools of hooch. What the heck?! Hooch in an hour? An hours difference and I missed my chance? I have it in a cabinet so it can stay a dark place. Why wasn't it ready? Did I just miss my chance? What am I supposed to do, sit there and stare at it for eight hours until it reaches the exact precise moment that I'm supposed to test it? Am I supposed to test it every 15 minutes? And why did the hooch appear so suddenly? I have a lot of questions I want to know why it wasn't ready and if I miss my chance or if it's just not ready yet because it's still super hungry. Thanks!
