Here in the LA area, we have two restaurants that serve Islamic Chinese cuisine? What specific region
of China would this cuisine represent?
I was under the impression that it would represent food served up in Xinjiang province, in the
Northeast, where it seems China's Muslim population is predominantly concentrated. Is this correct?
And if so, is there any differentiation between Islamic Chinese and Uighur cuisines?
