The sushi last night was outstanding. I had much of what Perceptor had and described in his earlier post, and couldn't get enough of the tuna skin sausage/meatball. Masaru used to make me marinated tuna skin years ago at R23 and I was immediately able to pick out the flavor and texture of the tuna and tuna skin when he quizzed me and said "you have two minutes to tell me what you think is in there." Everything was amazing. I could taste the flavor, consistency and texture of the outstanding uni just by looking at it. Also, perhhaps the best Aji I have had in several years (like, since Masaru left R23 in 2001). The Saba was delicious too. And that seared ono was indescribably good -- the flavors of the charred fat are still lingering on my palate. Wish I had brought my camera, but then again, Perceptor really captured all you need to know in his photos (see link).
