Irish White Pudding

I picked up some Irish white pudding (sausage) last night at my local grocery story. It's a long link of pork based sausage with oatmeal and other stuff in a natural casing. It is, in fact, white.

Online all the references I've found are for the kind of sausage you cut into slices and fry in rounds, not stuffed into a casing.

I am assuming frying is the best cooking method; any suggestions for serving?
