Irish Cookbook Recommendations?

I'm Irish-American, but you'd never know it from my cooking. I'd like a good cookbook covering traditional Irish cuisine. I tend to like cookbooks that do more than just contain a list of recipes. I like them to discuss what the origins of the food are, the best equipment for making it, what region it originates from, etc. Some examples being Flour, Water, Salt, Yeast: The Fundamentals of Artisan Bread and Pizza by Ken Forkish and Essentials of Italian Cooking by Marcella Hazan.

Does anyone know of a good Irish cookbook in the same spirit as those?
