Iris or Inis Fritta - Info please?

I just had my first experiance with an iris today.

It is an Italian type donut (like a beignet) that is filled with oozing custard or ricotta, covered with bread crumbs and fried. It is a Sicilian pastry and this is supposedly the Catania version.

In Palermo they hollow out a stale roll, fill it, cover in bread crumbs and fry.
