There is a very interesting article in the Food Section of today's SF Chronicle. It is about the fifth taste or unami in foods.
You know what I'm talking about if you kept up on the wine, taste, etc, thread recently. Anyway, it explains what Melanie was talking about very thoroughly and gives many examples. I though I was up on all the new food stuff, but this one got by me. The concept is familiar, but the specific techniques of balancing the five tastes is very interesting. Check it out. If you don't live in the Bay Area, hopefully the Chronicle's food section can be read online.
