Southern Pressure Cookers Cookbooks Instant Pot

Surprised there’s been no discussion of “Instantly Southern: 85 Southern Favorites for Your Pressure Cooker, Multicooker, and Instant Pot” by Sheri Castle. It seems to be well regarded (and is currently discounted to $2.99 on kindle).

Anyone using it out there?

        I'd worried this was neurotic, but it turns out hordes of people likewise were caught up in the hysteria and glommed on to one of the periodic irresistible price dips and never got started.

        I saw excerpts from this cookbook once, and they tempted me. So when the book discounted to $2.99, I snatched it up.

        So I now own a super-discounted cookbook for my super-discounted Instant Pot, neither used. I'm really winning here.

        Note: "Comfort in an Instant" by Melissa Clark also looks good, but the price hasn't budged much.

          I've found ours so useful in my nicely equipped home kitchen that I took it on a road trip with a 15' (!) travel trailer earlier this year, along with printouts of recipes I liked using it for at home. It was an experiment that really paid off. We did a fair amount of "boondocking" without electricity, so it sat in the cabinet under the couch those days. But when we were going to camp with electricity, that big thing was more than worth hauling. I'd pick something that looked good in a market late in a long day of driving and sightseeing and, once parked, with the InstantPot be able to knock out a nice dinner, plus leftovers for the next day or two. While I went for a walk or read while I watched my husband fishing.

          I'm overloaded with cookbooks, but could be seduced into getting this one if you found a recipe it'd be a crime not to try... :)

            I love your story of roughing it with instant pot. Is there one single recipe you can point me to that will bring me to the IP alter? Whenever I ask a devotee this, I always get either 1. Lots more raving about how VERSATILE it is (with no one recipe), or 2. A confession that, dude, it’s really just a pressure cooker.....

            I have and use an IP. That said, I’m not at the IP altar. It’s a decent slow cooker and a decent pressure cooker, but it only takes up the shelf space of one or the other. I like the convenience, like deciding at five to have a rack of ribs. Are they as good as the ribs off my smoker? No. But the smoker route takes six hours. Also, a southerner appreciates being able to slow cook a Dr Pepper pork shoulder or a pot of beans and not heat up the kitchen. I look at the IP to knock out simple food easily and/or quickly without too much appliance clutter. If I’m making a fancy dish, like Julia’s BB, I’m not trying it in the iP.
