In need of inspiration - Pork Chops

I thawed some pork loin chops (boneless) for dinner but need a creative way to prepare them. Normally, I would pan fry and simmer in mushroom soup or make a honey mustard glaze. Been there - Done that - need something new. They are on the thin side so they would not be good for stuffing. How would you suggest I prepare them?
