Bonjour Paris furnished an interview with former-three-star(at one point)-chef Roger Verge (Moulin de Mougins), in which the chef provided the following recommendations in France.
I'd appreciate members' experiences with the two restaurants, particularly La Meuniere in Lyons and the tablier de sapeurs dish.
(1) Les Terraillers

"... Michael Fulci, now working at Les Terraillers ... He was at the Moulin and then chez Ducasse where his creativity and passion was much appreciated. The Fulcis create a picture-perfect atmosphere, and what could be nicer than to spend a fragrant summer evening on their vine covered terrace... savouring a wild sea-bass cooked in a salt crust, or a pan bagnat of rouget?"
(2) La Meuniere, Lyon, for the tablier de sapeur tripe dish (also common at Lyon bouchons, which I have unfortunately not yet visited)
"I have a weakness for the solid bistro food that one finds in Lyon... I go to La Meuniere, an authentic bistro in Lyon market, for tablier de sapeur. Pieces of tripe are dipped in beaten egg and covered with breadcrumbs. They are then fried and served with snail butter.
