what are some of the most "innovative" restaurants in the world?

For fun, I am trying to collect a list of restaurants around the world that people regard as the most "exciting." Specifically places where the emphasis is on bending the rules for flavors, presentation, interpretations of classic dishes, and so on. I am not so concerned about elegance or the absolute heights of classical technique. So for example Grammercy Tavern, for all its charms, would not qualify for this list.

Here are a few I know of by experience or reputation.

L'Arpege (Paris)
L'Astrance (Paris) (an up-and-comer)
El Bulli (Girona, Spain)
Arzak (San Sebastian, Spain)
Babbo (NYC)
Craft (NYC)
