I had some time to kill and randomly went into Inklings last week.
First off and most importantly, the espresso. Stumptown Roasters Hairbender blend. On the hopper of the Mazzer Robur grinder they had written in a grease pen the dose / time/ yield which immediately gave me a good impression that they knew what they were doing. Dose was weighed and then pulled on their La Mozzocco GB5. Hairbender is a notoriously difficult blend to pull. This lacked the body and the nuttiness but was nonetheless very good.
The nitro-infused cold brew was refreshing on a hot day but not earthy shattering with regards to flavor. I was hoping for more.
They had Stumptown beans for sale. Roast date was 2 days prior. I don't know how often they get shipments.
Atmosphere was excellent with the tall ceilings, space to spread out yet at the same time didn't encourage people to be antisocial staring at their laptops. Multiple rooms to hang out in too.
Despite not being overwhelmed by their coffee, their technique definitely shows that they know how to make reliable high-quality coffee. I'll definitely be back when I'm in the area.
